A (time sensitive) Quickie
Hopefully, Santa didn't find out the truth about you ... so you still got a good haul at Christmas? Also, you may have been on that lying bitch in the bathroom and have come to realize the scale (get it?) of your indiscretions at the dessert table! So I found this as a way to use up some of those leftovers and get back on track. I simplified it and cut it down to serve less than a regiment. It's a Tossed Turkey Salad.

Dressing
A teaspoon of sugar, two tablespoons of red wine vinegar, 1/2 cup of mayo with a shot of hot sauce.
Stuffing
Break leftover dressing down into crouton sized chunks and roast on low heat until they are crunchy.
Veggies
One cup of whatever you got in the fridge. I used red pepper, onion and those frog balls I pickled a couple of months ago.
Meat
I cup of chopped turkey. Dark meat is obviously better but sneak some white meat in if you can?
Lettuce
The math calls for three cups but I put in almost twice that much. I added two chopped hard-boiled eggs, the croutons, about 20 jellied cranberries and half of cup of grated old white cheddar. It certainly didn't feel like diet food! Enjoy and see you in the new year.
